Butternut squash is also part of the Cucurbitaceae family. Some people know it as Doubeurre or Peanut Squash (with respect to its shape). It can be eaten raw, cut into salad, but it is exquisitely cooked, in soups and gratin, mashed, pan-fried thanks to its nutty flavor. It's a real slimming pleasure!
